Houston, We Have a Problem...
<--- That would be the empty salsa jar that has seen the uglier side of my addiction to broccoli-salsa quesadillas. Sounds weird. Tastes great. I won't bore you with a full recipe: Steam broccoli (I don't add seasonings). Pile a bunch of said broc on a whole wheat tortilla along with a little cheese (I prefer Trader Joe's Monterey Jack) and a spoonful or two of the beautiful salsa to your left. I go heavy on the broccoli and salsa, light on the cheese. A random Google search revealed that many people have "been there done that" with the broccoli quesadillas. That was news to me! I've had this new-found combo for lunch four days in a row -- my streak broken only due to the aforementioned salsa situation. Must get my tush to Target to buy more (it's the Corn, Black Bean & Roasted Pepper salsa by Market Pantry, BTW). Lunch today was a Veggie Quinoa Curry bowl that I begrudgingly happily devoured. Recipe on that one coming soon. Now that I've had to get more creative with my meals (no more cereal for lunch, Vanessa), I try to prep my bases like quinoa or veggies a few days before. It's really helped ease my time in the kitchen -- especially when there's work to be done. Now that's heat and go at it's finest! Although I am a fan of Annie's Cheesy Ravioli....
